Sue's Mexican Rice

Instructions

Step 1
Heat butter in pan over high heat until melted. Add rice and fideo and stir to coat with butter. Let cook 2-3 minutes or until golden brown. Add garlic and stir for about 1 minute (do not burn).
Step 2
Add water, salsa, chili powder, onion, and bouillon and stir to make sure bouillon dissolves. Add peas and carrots or corn. Cover and bring to boil.
Step 3
Reduce heat to medium or medium low so rice continues to simmer. Do not stir. Let it cook for 15-20 minutes.
Step 4
Remove from heat and let sit until all water is absorbed, at least 5 minutes.
Step 5
Before serving, stir thoroughly to make sure bouillon is evenly distributed.
