Smoked Mullet with Vegetable Rosti and Hollandaise Sauce.

Step 1
Rosti
Step 2
Mix all ingredients in a bowl and season with salt and pepper

Shape into cakes and using a metal ring , pan fry on both sides

Transfer to medium hot oven for 15 minutes

Mullet
Step 6
Using a hot smoker or wok smoke the fillet of mullet for about ten minutes until fish is tender and moist

Hollandaise
Step 8
In a small metal bowl, using a stainless steel whisk, whisk egg yolk and 1 tbsp water until completely blended and frothy.
Step 9
Place the bowl over a low heat; whisk constantly until thickened. Remove from heat and continue whisking to help cool a little.
Step 10
Slowly whisk in melted butter; whisk in remaining ingredients. Serve warm. Yields about 2 tablespoons of sauce per serving.
