This recipe takes puttanesca pasta in a whole new direction. The flavours intensify under the grill and when the stringy mozzarella mixes with the sauce it creates a luxurious version of the original dish.

Instructions

Step 1
Cook the pasta in a pan of salted boiling water as per the instructions on the packet, then drain.
Step 2
Pan-fry the onion in a splash of olive oil over a medium heat for a few minutes. Add the garlic and continue to fry for a few more minutes until the garlic starts to colour. Add the chopped tomatoes, olives, chilli flakes, oregano, and a pinch each of salt and pepper, then simmer for about 10 minutes.
Step 3
Preheat the grill to high. Add the cooked pasta to the sauce, transfer everything to an ovenproof dish if your frying pan is not oven proof, then top with the mozzarella slice and cook for a few minutes under the grill until the cheese is bubbling and starting to colour.
