This creamy spinach orzo is the perfect easy weeknight meal as it only takes 30 minutes to make…YES ONLY 30 MINUTES! You can make orzo a variety of different ways, creamy or non creamy, with a variety of different mix ins too! Orzo is a perfect switch up of starch to add to your weekly meals. If you did not know Orzo is the baby that rice and pasta never had:) It is a nice mix of them both. Instructions
For the cream sauce
Step 1
In a small sauce pan melt your butter. Whisk in your milk. Add mozzarella cheese and whisk until cheese is fully melted and the sauce becomes creamy and smooth — about 5-10 minutes. Add in your salt and Italian seasoning and mix to combine. Add to your orzo and mix until combined.
For the orzo
Step 2
In a large hot sauce pan add your cooking oil and your onion and garlic until fragrant and translucent. Add in your orzo and allow it to toast for about 1-2 minutes mixing occasionally. Add in your seasonings and mix again. Add in your vegetable (or chicken) broth and allow to cook covered (letting a little air out) for 9-11 minutes on medium high heat. Allow to rest for 5 minutes and then fluff out your orzo. Add in your spinach and let that cook down while mixing it in to combine everything. Add in your cream sauce and mix again Top with parsley and/or Parmesan. Serve and enjoy:)
