Hearty Bacon Potato Chowder

Add precooked ham for extra protein. My husband does not like corn added to meals, so I make it separately and add just to my bowls.

Ingredients
6 servings
aluminum foil
1 lbbacon
pork
1 Tbsoil
4 cupspotatoes
cubed
1onion
medium, chopped
1 cupsour cream
1 ¼ cupsmilk
or half and half
1can chicken broth
1 cancream of chicken soup
undiluted
3cloves garlic
pressed
12 ozfrozen corn
½ tspthyme
1 tspblack pepper
1 tspsalt
½ tspno salt table seasoning
optional
cheddar cheese
shredded, optional
ham
Pre-cooked, diced or cubed, optional
Instructions
Step 1
Line a bar pan with aluminum foil. Bake bacon at 375 F for 20-25 minutes until crispy.
Step 2
While bacon is in the oven, chop potatoes and begin to fry in oil over medium stove heat, stirring occasionally. Sprinkle in a pinch of salt, pepper, and Mrs. Dash. Cook about 20 minutes or until potatoes are crisp tender. Add onion and optional ham.
Step 3
Remove bacon from oven, transfer to paper towels and blot grease. Discard grease and aluminum foil in trash. When bacon cools cut or break into pieces about 3/4 inch long.
Step 4
Stir into pot with potatoes, soup, broth, milk, sour cream, corn, more salt & pepper, thyme, and garlic. Add bacon. Simmer on low 10 minutes or until potatoes are soft. Serve with shredded cheese on top.
