Mantha’s Sunday Sauce

You can use fresh tomatoes if you can find good ones! If not, use San Marzano canned tomatoes. This can be made with meat or without it. You can add or remove seasonings to your liking.

Instructions

Step 1
Add olive oil to a large pot over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
Step 2
Sauté minced garlic for about a minute, being careful not to burn.
Step 3
Add tomatoes, tomato sauce and tomato paste.
Step 4
Add chicken broth and red wine.
Step 5
Add all the seasonings including basil and parsley.
Step 6
Stir well and bring to a simmer.
Step 7
If you are making vegetarian sauce, you can leave as is. If you would like meat sauce, brown meat of your choice and add to sauce.
Step 8
Simmer on low for 3-4 hours to marry the ingredients.
