Instructions
Step 1
Quarter and remove stems/skins of tomatoes
Step 2
Dice celery, green pepper, and onion. Put in kettle
Step 3
Cook tomatoes and other veggies for 1 hour
Step 4
Put mixture in blender, then through colander leaving juice in bowl. Fill blender half full each time and hold cover. Discard peelings, etc

Put juice in kettle, heat to boil, add 1/2 cup butter. Take a little juice out & add a little flour, salt and sugar to make thickening
Step 6
Mix 1 cup flour, 1 cup sugar and 1/4 cup salt for thickener
Step 7
Add the thickening to boiling juice. A little at a time put in sterilized jars
Step 8
Process in hot water bath 15-20 minutes
Step 9
*if double the recipe, don’t double the salt
Step 10
Makes 4-5 quarts for 1 batch
