Instructions
Step 1
Dice onions, celery, carrots, add to pot with oil.
Step 2
Let cook on med heat while you cut all the other veggies, stirring occasionally.
Step 3
Add broth, herbs, seasoning, salt and pepper.
Step 4
Boil until veggies are soft.
Step 5
Remove stems from pot if you uses whole sprigs of herbs.
Step 6
Add Cottage cheese to pot.
Step 7
Blend with stick blender until smooth.
Step 8
Stir in sour cream, salt and pepper to taste.
Step 9
Serve with croutons and cheddar cheese.
