Instructions

Step 1
Bring a large saucepan of water to boil over high heat and cook the linguine according to the package instructions until al dente (still slightly firm). Drain, reserving 1/2 cup of the pasta water. Do not rinse posta.
Step 2
In a large, heavy skillet, heat the olive oil over medium-high heat. Sautรฉ the garlic, onion, and oregano until the onion is just translucent, about 5 minutes.
Step 3
Add the salt, pepper, tomato paste, and 1/4 cup of the reserved pasta water. Stir well and allow it to cook for 1 minute.
Step 4
Stir in the tomatoes and cooked pasta, tossing everything well to coat. Add more pasta water if needed.
Step 5
To serve, mound the pasta in shallow bowls and tope with Parmesan cheese and parsley.
