Instructions
Step 1
In a pot, put in 250ml Balsamic Vinegar and reduce in half. Then put in 1/2 cup of sugar and reduce in half again. Set aside and keep at room temperature.
Step 2
Filet Black Cod off bone. Should get 4 filets. Season black cod with salt and pepper generously.
Step 3
Gently place black cod in a smoking hot pan with canola oil. Once all filets are in, lower heat to medium and sear until golden brown. Should take about 3 minutes. Flip fish when browning is achieved. Add 30g of butter and a squeeze of lemon, then baste fish with melted butter for 2 minutes and then set aside.
Step 4
Boil Brocolli, Mushrooms and Beans for 2 minutes. Boil carrots for 4 minutes. Combine in a bowl and add butter. Toss until butter melts, NOW LET'S PLATE!!
