Instructions

Step 1
Chop red pepper into bite sized pieces.
Step 2
Heat olive oil in a non-stick frying pan over medium heat.
Step 3
Fry red pepper for 3-4 minutes until slightly soft.
Step 4
Add chopped tomatoes and a splash of water.
Step 5
Season with salt, pepper, ground cumin, and smoked paprika.
Step 6
Add spinach and stir until wilted.
Step 7
Make two small wells in the pan and crack an egg into each well.
Step 8
Crumble feta cheese over the top.
Step 9
Place a lid on, and cook over medium-low heat until the eggs have set.
