Ingredients
4 servings

2 cquinoa
cooked

1cucumber

1red onion
chopped

1red bell pepper
any color will work

1 cparsley
chopped

1 x 15 ozcan chickpeas
Dressing
Instructions
Step 1
Cook the quinoa as instructed and let cool.
Step 2
While the quinoa is cooling, make the dressing—combine all ingredients and mix well.
Step 3
Chop the onion, cucumber, parsley and pepper. Add to the quinoa in a bowl with room to mix. Add the chickpeas, drained and rinsed.
Step 4
Add the dressing to the bowl and mix well. Then let flavors blend for 30 minutes and enjoy!
