Ingredients

1 x 15 ozcan chickpeas
or garbanzo beans, drained, rinsed

1egg

1clove garlic
finely chopped

1 teaspoonsmoked paprika

½ teaspoonground coriander

½ teaspoonground cumin

½ teaspooncoarse sea salt

1 cupfresh spinach leaves
chopped

½ cupshredded carrots

2 tablespoonsfresh cilantro
chopped

½ cuppanko crispy bread crumbs

2 tablespoonsextra virgin olive oil

0.5avocado
Toppings

cilantro leaves

cucumber

tomato

bell pepper

lettuce leaves

Any, about 4 inches in diameter, split horizontally, if desired
Instructions
Step 1
In food processor, place chickpeas, egg, garlic, paprika, coriander, cumin and salt.
Step 2
Cover: process with on-and-off pulses about 45 seconds or until nearly smooth.
Step 3
In medium bowl, stir together bean mixture, spinach, carrots and chopped cilantro until well combined.
Step 4
Stir in bread crumbs. Shape mixture into 4 patties about 3.5 inches in diameter and. 5 inch thick.
Step 5
In 10-inch nonstick skillet, heat oil over medium heat.
Step 6
Cook patties in oil 8 to 10 minutes, turning once, until brown and crisp.
