Instructions
Step 1
Preheat oven to 425°. Line large baking sheet with parchment paper and drizzle with oil.
Step 2
Combine egg whites, Parmesan, oregano, and garlic in medium bowl.
Step 3
Slice the zucchini into 1/4 inch thick slices on a diagonal. Place into the egg mixture and toss to coat.
Step 4
Place onto the baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway through.
Step 5
While the chips bake, mix the salsa. Combine black beans, tomatoes, jalapeño, and lime juice in a medium bowl to serve.
