Ingredients

1.5 lbsChicken breast boneless & skinless

15 ozcan diced tomatoes low sodium

8 ozcan of green chiles

0.5white onion
large, chopped

3 Tbsppickled jalapeños
chopped

4 cupschicken broth

2 cupswater

15 ozcan black beans
drained & rinsed

1can corn
drained

¼ cuptomato paste

½ cupquinoa
uncooked

½ tspsalt

1 tspcayenne pepper

½ tspred pepper flakes

½ tspblack pepper

1 ½ tspsmoked paprika

1 ½ tspdried oregano

1 ½ tspcumin

1 ½ tspgarlic powder

1 ½ tspancho chili powder

cheddar cheese
shredded, for topping

Tortilla chips
crushed for topping
Instructions
Step 1
Add all ingredients to crockpot and cook about 4-5 hrs on high or 7-8 on low.

Step 2
Temp chicken to make sure it’s at least 165 degrees. Then remove and chop or shred chicken. Then add back to soup.
Step 3
Serve topped with shredded cheese and crushed tortilla chips or try corn tortillas cut into strips.
