Uncle Dude's Tortilla Soup

Delicious and Vegan! Control the heat with the peppers. This recipe is very mild heat. Blends best in a Vitamix or equivalent, but an immersion blender will save you a lot of trouble! In many stores, Poblano peppers are wrongly called Pasilla peppers. Add some well massaged kale when you add chips for a special treat!

Instructions
Step 1
Saute the onion, garlic, and peppers in olive oil
Step 2
Add sauteed ingredients into a large cooking pot with all the other ingredients (except the fake cheese, chips, and cilantro). Everything should be diced.
Step 3
Fill with water to a half inch above ingredients.
Step 4
Bring to a boil, simmer 20-30 minutes or until potatoes are very tender.
Step 5
Add fake cheese and cilantro, then blend until creamy.
Step 6
Add tortilla chips into the soup and enjoy!
