Arakas (pronounced a-ra-kas). This deliciously sweet vegetable dish is very nutritious and rich in folic acid and Vitamin A. It's also rich in phytonutrients, minerals, vitamins, and antioxidants. The main reason it's part of my household's diet, however, is the fact that it's sweet and filling. Cooked in great quality olive oil definitely makes a difference to this dish, as it is a main meal. Peas for a main meal? Don't judge until you try it!

Instructions

Step 1
Heat half the olive oil in a pan and lightly sauté the red onion and green onions. Make sure that at this stage they do not get a lot of color. This should take approximately 3-4 minutes on medium heat
Step 2
Add the potatoes, carrots, tomato puree, sugar, and peas. Add salt and pepper to taste. Cover the ingredients with approximately 4 cups of water, or until they are half submerged.
Step 3
Cover the pan and leave to boil for approximately 20 minutes. Once the water is almost absorbed and the carrots and potatoes have softened, add the other half of the olive oil and the chopped dill. Boil for another 10-15 minutes until the water has been completely absorbed.
