Instructions
Step 1
Combine sour cream with large squeeze of lemon juice to taste. Add water 1 spoonful of a time til drizzling consistency. Salt & pepper to taste
Step 2
Melt 1 tbsp butter in large pan over medium high. Add poblano & cook til softened, 3-4 mins
Step 3
Add beans & chiles with sauce, then season with salt & pepper. Cook until beans & chiles are warmed through, 2-3 mins
Step 4
Transfer mixture to bowl and wash out pan
Step 5
Assemble quesadillas by filling tortillas with bean mixture & cheese
Step 6
Melt 1 tbsp butter in cleaned pan over medium-high. Add quesadillas & cook
Step 7
Serve quesadillas drizzled with lemon crema and hot sauce
