Ingredients
4 servings
½ cupchicken stock
1 cuphearts of palm rice
½ cupcoconut milk
1 poundground chicken
½ cupred onion
chopped
½ cupred bell pepper
chopped
1 tablespoonoil
1 ½ tablespoonssoy sauce
2 teaspoonsjerk seasoning
2garlic cloves
chopped
1 teaspoonfresh ginger
grated
¾ cupmango
chopped
¼ cupfresh cilantro leaves
chopped
butter lettuce
for serving
salt
to taste
pepper
to taste
Instructions
Step 1
Combine hearts of palm rice, chicken stock, coconut milk, salt, and pepper in medium saucepan; bring to simmer and cook until most liquid is absorbed.
Step 2
Meanwhile, cook ground chicken, red onion, and red bell pepper in oil in large skillet over medium heat. Cook until chicken is cooked through. Stir in soy sauce, jerk seasoning, garlic, and ginger. Cook until fragrant. Fold in mango and cilantro. Season with salt and pepper if needed. Serve rice and chicken mixture in lettuce leaves
