Indian-Spiced Shepherd’s Pie

Here’s a comforting and Indian-inspired twist on Shepherd’s Pie!

Instructions

Step 1
1. Make the mash! Add the sweet potatoes, garlic, coconut milk, and salt to a large saucepan.
Step 2
2. Bring to a boil over medium heat, stirring occasionally. Turn down the heat to maintain a simmer. Cover and cook for ~45 min or until the taters are fork-tender.
Step 3
3. Add in the garam masala. Blitz the sweet potatoes with an immersion blender until smooth. Add more salt if needed.

4. While the potatoes are cooking, make the filling. Heat a 12-in. broiler-safe skillet over medium heat.
Step 5
5. Add the ghee and onions to the pan. Sauté for 10 min or until the onions are translucent.
Step 6
6. Toss in the garlic, ginger, and peppers. Sauté for 30 seconds.
Step 7
7. Add in the ground meat. Cook for 3 to 5 min or until the meat is no longer pink.
Step 8
8. Stir in the salt, turmeric, and coconut milk, and bring to a simmer. Cover the pan and reduce the heat to medium low. Cook for 20 min, stirring occasionally.
Step 9
9. Stir in the peas and cook uncovered on medium heat for ~5 min or until the liquid in the skillet has mostly evaporated.
Step 10
10. Turn off the heat and mix in the garam masala, lemon juice, and minced cilantro.
Step 11
11. Smooth the top of the meat in the pan.
Step 12
12. Heat the broiler on high with the rack about 6 in. from the oven’s heating element.
Step 13
13. Dollop the sweet potato mash all over the top and smooth it to the edges with a spatula.
Step 14
14. Broil the pie for ~12 min or ‘till the mash is golden brown and the filling is bubbly.
