Instructions
Step 1
Cut sweet potatoes in half. Cover in oil, salt and pepper and bake at 220 for 30-40 mins.
Step 2
Mix honey, jerk seasoning, garlic, lime juice and some oil in a bowl and place in the chicken. Leave to marinade.
Step 3
Coat a roasting tray in oil and place sausages on the tray. Bake for 20-25 minutes, turning when needed.
Step 4
In a hot pan, fry the chicken until charred on both sides. Then add to the tray with the sausages and cook for 10-15 minutes.
Step 5
Just before the sausages are done, spoon the mango chutney over the sausages.
Step 6
(I made a garlic butter to add over the roasted sweet potatoes and added some cheese over the top too)
