Don’t feel you have to limit your pita toppings to those listed. Load up on your favourite veggies and add some feta or havarti, halloumi, sprouts, seeds, nuts...there are no rules.

Step 1
Cut pitas in half and carefully open each pocket.
Step 2
Wrap the pockets in foil and warm in a 300F oven while you prepare the chicken and toppings.
Step 3
Heat oil in a skillet and gently warm chicken through, add oregano and taste for seasoning.
Step 4
Fill warmed pockets: Spread tzatziki, add romaine, tomatoes, cucumber and onion and warm chicken. Add a squeeze of lemon.
