Instructions
Step 1
Assemble all ingredients.
Step 2
Prepare all the ingredients: crush the garlic, dice the onion, dice the pineapple, dice the tofu, slice the spring onion and coriander.
Step 3
Separately, toast the cashew nuts until golden brown.
To cook
Step 4
Par cook and cool the rice.
Step 5
Add the coconut oil to wok.
Step 6
Add the crushed garlic and diced red onion, cook for 2-3 minutes until soft.
Step 7
Add the tofu and pineapple, stir fry until golden brown and slightly caramelised.
Step 8
Add the cooked rice and raisin. Stir fry everything together until its all mixed well.
Step 9
Add the spring onion and coriander.
Step 10
Check the seasoning and add salt, pepper and lime juice to taste.
Step 11
Serve in a pineapple boat or in a bowl with a wedge of lime, garnish with toasted cashews and fresh coriander leaf.
