Ingredients
6 servings
1 Tbspolive oil
1yellow onion
medium, diced
1carrot
large, peeled and chopped
2celery stalks
chopped
1red bell pepper
seeded + chopped
4garlic cloves
minced
2 cupsgreen beans
trimmed and chopped
1 x 28 ouncecan of diced tomatoes
4 cupsvegetable stock
1 ½ tspdried oregano
1 tspdried basil
½ tspdried thyme
1 tspsea salt
½ tspblack pepper
4 cupskale
stemmed and chopped
2 Tbspfresh parsley
chopped
Instructions
Step 1
Heat up a large pot over med-high heat and add olive oil.
Step 2
Throw in onion, carrot and celery and cook for 3-5 minutes or until onions are translucent.
Step 3
Add in garlic and bell pepper and cook for 1 minute.
Step 4
Add in green beans and cook for another minute.
Step 5
Top with diced tomatoes, vegetable stock and spices and give it a stir.
Step 6
Bring to a boil and then let simmer, uncovered over med-low heat for 25 minutes.
Step 7
Add in kale and cook for 5 more minutes (it will wilt).
Step 8
Top with fresh parsley and serve warm.
Step 9
Will keep for a week in refrigerator and freezes well for several months.
