For the salmon:
For the guacamole:
½ cupcorn kernels
drained
1 tspolive oil
½ tspsalt
plus more for the corn

¼ tsppaprika

Instructions
Step 1
Preheat the oven to 400. Line a sheet pan with parchment paper and set aside.
Step 2
Add the salmon to the sheet pan, then season with the salt, cumin, pepper and drizzle with the hot honey. Brush the honey evenly over the salmon. Sprinkle the jalapeños over the top, drizzle with a little olive oil, then place the salmon in the oven for 9-12 minutes, until the salmon is almost cooked through. Place the salmon under the broiler to finish cooking for about 2 minutes.
Step 3
While the salmon is cooking, make the guacamole. Start by heating a sauté pan over medium-high, and once it is hot add the olive oil, corn, a pinch of salt and paprika. Sauté for 2-3 minutes until it begins to brown. Remove from the heat.
Step 4
Add the avocado, onion, cilantro, jalapeños, cumin, salt and pepper to a bowl or a molcajete and mash together. Add the lime juice, garlic and sautéed corn and mash together again to create a creamy guacamole.
Step 5
Make the tacos. Add a scoop of guacamole to a tortilla, spread it out, then add a small chunk of salmon. Fold the tortilla over, drizzle with honey and sprinkle with scallions.
