Orzo green pesto, baked salmon & sun-dried tomato

Instructions

Step 1
Cook the orzo to packet instructions and mix in green pesto, lots of fresh basil and spring onion, peas, diced red pepper and chopped sun dried tomatoes.
Step 2
Dress the salmon simply in salt, pepper and lemon. Bake for 7 mins in a hot oven (200c fan), remove the skin and flake.
Step 3
Crumble over feta and serve with lemon balsamic dressing.
