Step 1
In a high powered blender or food processor place bananas, garlic, rice vinegar, curry powder, onion powder, coconut oil, and almond milk together and blend on high for 10 seconds until smooth.
Step 2
Slice all veggies (i love using bell peppers, onions, carrots, and green beans) and saute with 1 tablespoon of coconut oil or olive oil until tender. If you’re adding any sort of protein I would add them during this stage as well. Pour curry mixture over veggies and simmer for 5-10 minutes.
Step 3
Serve over cauliflower rice. Enjoy!
