Instructions

Step 1
Preheat oven to 400 degrees
Step 2
Heat heavy cast iron skillet and cook bacon until crispy
Step 3
Remove bacon and chop small
Step 4
Fry onions until a bit brown but not cooked through
Step 5
Sear salmon on medium-high heat (flesh down, skin up) and cook for 2 minutes
Step 6
Put salmon skin side down in pan
Step 7
Add white wine, bacon, and onions to pan
Step 8
Bake 10-15 minutes in oven
Step 9
Remove salmon and set aside to rest
Step 10
Put pan back on high heat and add mushrooms
Step 11
Boil on high heat until sauce reduces to about 1/3 of volume
Step 12
Remove from heat, add sour cream and dill
Step 13
Serve over salmon
