Step 1
Sauté onions, peppers, and celery in a large pot about 3 minutes.
Step 2
Add garlic, sauté until fragrent, about 30 seconds. Then add in the mushrooms and seasonings. Sauté another 3 minutes.
Step 3
Pour in the tomato sauce and add broth to your thickness preference. The liquid needs to be enough to cover your chicken breasts. Add in your raw chicken breasts and simmer for 20 minutes.
Step 4
While sauce is simmering, cook noodles to package instructions.
Step 5
Once the chicken is cooked, you can shred in the pot or remove and shred on a cutting board. I shred mine on a cutting board, then use an immersion blender to make my sauce less chunky as my children are picky and won't touch it if they see vegetables. Then I add my shredded chicken back in along with my noodles.
Step 6
Suggestions: I always add fresh basil at the end process, but if you don't have it, don't worry about it.
This meal can be made even faster by keeping pre-chopped veggies in the freezer. I chop large amounts of veggies every few months and keep them in the freezer for fast cooking.
