Instructions
Step 1
Halve, peel and finely chop shallot
Step 2
Pat steak dry with paper towels, season all over with salt and pepper
Step 3
Heat a drizzle of oil in a medium pan over medium-high heat
Step 4
Add steak and cook until browned and cooked to desired doneness (3-6 minutes per side). Remove from pan and set aside to rest
Step 5
Heat a drizzle of oil in pan used to cook steak over medium heat. Add shallot and cook, stirring until softened (1-2 minutes)
Step 6
Stir in stock concentrate and 1/4 cup water. Bring to a simmer and cook, scraping up any browned bits from bottom of pan, until reduced by half (2-3 minutes). Turn off heat, stir in 1 tbsp of butter, season with salt & pepper
