Green Bean Casserole with Crispy Onion Rings

The secret ingredient in this casserole? Frozen onion rings! So delish and so easy to make. If making ahead, cover and refrigerate after adding the green bean mixture to the baking dish and add the frozen onion rings right before going in the oven.

Instructions

Step 1
Preheat oven to 400 degrees. Grease a 9x13 baking dish.
Step 2
To blanch the green beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes. Drain, then immediately add to large bowl of ice water to stop the cooking process. Drain again and set aside in a large mixing bowl.
Step 3
Melt butter in a large skillet over medium heat. Add the shallots, garlic, mushrooms, thyme and 1/2 tsp salt and cook until most of the liquid from the mushrooms has evaporated, about 5-7 minutes. Sprinkle in the flour and cook for 2 minutes, stirring constantly. Slowly pour in the chicken broth and half and half and bring to a boil. Reduce the heat and simmer until thickened, about 4-5 minutes. Stir in cheese, 1/2 tsp salt and pepper and take off the heat.
Step 4
Pour mushroom sauce over the green beans. Toss until combined then add to greased baking dish. Top with frozen onion rings and bake for 35 minutes. Remove from the oven, top with crushed crispy onions and bake again until browned, about 5-10 more minutes.
