vg/gf falafel
15 ozchickpeas
rinsed, drained, and patted dry
⅓ cupfresh parsley
chopped
2garlic cloves
minced
⅓ cupwhite onion
1 Tbspsesame seeds
1 ½ tspcumin
¼ tspcoriander
¼ tspsea salt
black pepper
3 Tbspchickpea flour
sub all purpose flour, add more if needed
spicy hummus
1 x 15 ozcan of chickpeas
3 Tbsptahini
⅓ cupaquafaba
liquid from the can of chickpeas
2 Tbsptomato paste
1 Tbsphot sauce
2 TbspLemon Juice
1 Tbspolive oil
1garlic clove
1 tspsalt
¼ tsppaprika
¼ tspcumin
cayenne

Instructions
Step 1
1. FALAFEL: add chickpeas, parsley, onion, garlic, sesame seeds, cumin, salt, pepper & coriander to a food processor and pulse until you reach a crumbly texture.
Step 2
add flour and pulse, add more flour if needed. adjust seasoning if needed.
Step 3
place in fridge to chill for a bit (10-30 min).
Step 4
scoop the dough into falafel balls, place on a baking sheet, & air fry/bake at 350 for 15-20 min.
Step 5
2. HUMMUS: add all the ingredients to a food processor and blend until smooth & creamy. adjust seasonings to taste if needed.
Step 6
assemble all ingredients into a bowl and add whatever toppings you want!
