Apple and Cinnamon Bircher (Vegetarian)

Bircher muesli is the original overnight oats recipe created by a Swiss physician over a hundred years ago as a supposed tonic for good health. To this day it still remains a popular breakfast choice in Switzerland and Germany. It is also really versatile and can be prepared with a wide range of different fresh and dried fruits or nuts. This apple and cinnamon version is low in energy density and can be enjoyed for breakfast or also as a filling snack. Vegans can replace milk and yoghurt with non-dairy alternatives.

Step 1
Cut up the apple, remove the core and blitz in a blender for 10 seconds. Transfer the apple to a bowl and add the lemon juice, milk, oats and raisins. Stir well then cover and refrigerate overnight. In the morning add the yoghurt and a pinch a cinnamon. Whilst the muesli is already sweet, you can drizzle in a little maple syrup or honey to increase the sweetness or even add some additional fruit. Adding more cinnamon will increase the aromatic flavour.
