Instructions

Step 1
1. In a large pot, heat oil over medium high heat. Season sausage with creole seasoning and cook on all sides. Remove sausage and set aside.

2. Add onion, celery, bell pepper, garlic, bay leaves, cayenne and thyme and cook until vegetables are soft.
Step 3
3. Add tomatoes and water/broth. Add yeast extract. Season with salt and pepper and simmer, covered, for 20 minutes.
Step 4
4. Add rice, stir well and return to a boil. Reduce heat to low, cover pot, and cook for 15 minutes.
Step 5
5. Add sausage, green onions and parsley, mixing carefully, and continue to cook, covered, for another 10 minutes. Remove from heat, and let sit 10 minutes before serving. Sprinkle with more green onions for garnish.
