Chicken Cacciatore with Garlic Toast
Instructions
Step 1
Meal #1: Cheesesteak Sub with Roasted Potatoes: Fry steaks with pepper and onion strips and a little oil. Cut potatoes into chunks and roast in oven with olive oil at 400 F about 40 minutes or until crisp. Divide Cheesesteak mixture and potatoes into containers. Finish container off with a roll. Freeze.
Step 2
Meal #2: Barbecue Chicken with Roasted Potatoes: Fry breasts until almost cooked. Coat with Barbecue Sauce and continue cooking until done. Package breasts with Roasted Potatoes and a bun.
Step 3
Meal #3: Meatball Sub: Cook prepared Meatballs with pasta sauce. Put in containers while still warm. Add mozzarella or provolone slices and let melt. Add roll to containers.
Step 4
Meal #4: Pasta and Meatballs with Garlic Toast: Saute zucchini, onions and peppers until soft. Add pasta sauce. Cook pasta until al dente. Portion into containers. Scoop over meatballs in pasta sauce. Add a portion of the vegetables. Add bread spread with garlic butter.
Step 5
Meal #5: Pulled Pork or Chicken Barbecue: Spray the inside of slow cooker with non-stick cooking spray (or use a slow cooker liner). Combine paprika, salt, pepper, garlic powder, mustard and liquid smoke in a small bowl. Rub all over the roast, covering all sides. Place lid on slow cooker and cook on low for 8-10 hours (or high 5-6 hours). Shred meat when finished and add bottle of BBQ sauce. Portion into freezer containers with a bun on the side.
Step 6
Meal #6: Chicken Cacciatore: Saute chicken, onion and sweet peppers for 10 minutes or until the chicken is browned, stirring often. Add the garlic and cook and stir for 1 minute. Stir in the sauce and wine and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes. Add kalmata olives. Serve the chicken mixture with pasta and garlic bread.
