Spicy Bolognese style sauce with sausage

Instructions

Step 1
Break the sausage meat into the pan and cook until brown on a medium heat
Step 2
Remove the sausage meat from the pan, add the chopped onion and cook until soft
Step 3
Add the garlic and cook for 2 min
Step 4
Deglaze with the red wine, just use water if you're not using red wine
Step 5
Add the tomato puree, mixed herbs and chilli flakes, season and then reduce
Step 6
Add the tin of tomatoes and half a tin of water and cook down/reduce again
Step 7
Cook the pasta in salted boiling water until al dente and reserve some pasta water
Step 8
Add Sausage meat back to the sauce and season to taste
Step 9
Add 250ml of the pasta water to the sauce and reduce again until rich and glossy
Step 10
Add sugar to taste to remove the acidity of the tomatoes, and test the seasoning, adjust as needed. Add milk/cream if the sauce is too spicy
Step 11
Serve
