Ingredients
5 servings
2 cupsonions
chopped
3cloves garlic
chopped
2 ½ cupsbutternut squash
chopped, 1/2 inch pieces
4 ½ cupsblack beans
cooked s low-sodium or no-salt-added black beans, drained
2 tablespoonschili powder
2 teaspoonsground cumin
2 ½ cupslow-sodium vegetable broth
or no-salt-added
1 ½ cupsno-salt-added diced tomatoes
1 bunchSwiss chard
tough stems removed, chopped or other greens
Instructions
Step 1
Add all ingredients except Swiss chard to a large pot. Bring to a boil, reduce heat and simmer, uncovered, until squash is tender, about 20 minutes.
Step 2
Stir in Swiss chard and simmer until chard is tender, about 4 minutes longer.
Step 3
Note: Choose tomato products packaged in non-BPA cartons.
