Instructions

Step 1
Pre-heat oven to 200ºC

Crack 6 eggs into a bowl, season with salt and pepper and whisk together

Pour egg mixture into a greased baking dish and top with chives. Bake for 5-7 minutes.

Once cooked, cut into 6 even slices

Combine mince with onion powder, garlic powder, salt, pepper, and chilli powder. Form into 6 balls, approx. 75g each

Heat a frypan and add oil. Cook the bacon

Remove bacon once cooked, and in the same pan cook the mince patties. Flatten the mince balls to form a patty and cook on high heat for 2 mins per side

Toast English muffins.
Step 9
Assemble muffins by stacking the egg, mince patty, cheese slice, and bacon. Top with mayonnaise.
