Use leftover baked ham from Easter along with pineapple and corn to make these deliciously crispy, sweet and savory fritters.

Instructions

Step 1
Whisk eggs in a large bowl. Add ham, pineapple, corn, cheese, onion, garlic, parsley, salt, pepper and flour. Mix well
Step 2
Form mixture into 10 3-inch patties. Add a bit more flour if mixture does not hold together
Step 3
In a large nonstick skillet, heat oil to medium and cook fritters until golden brown, about 1 to 2 minutes per side. Remove cooked fritters to a plate lined with paper towels
