Simple comfort food style dinner that's been elevated beyond what you find at a gas station or most restaurants.
Note: I also suggest adding some roasted corn that has been cut off the cob for a bit of sweetness.

Ingredients

For the Chicken
2 lbsboneless skinless chicken breast
1 cupchicken stock
1can chipotles in adobo sauce
3 TbsTaco Seasoning
Simple Beef
For the Guacamole
For the Cheese Sauce
3 TbsUnsalted Butter
3 TbsAll Purpose Flour
2 cupwhole milk
1 cupamerican cheese
2 cupcheddar cheese
2 tsppaprika
2 tspgarlic powder
1 tspground cumin
Toppings (Optional)
pickled jalapeños
1serrano pepper
arugula
3roma tomato
0.5purple onion
mexican crema
3 x 2.25 ozcan Sliced Black Olives
Mild Salsa
For the Tortilla Chips
Instructions
For the Chicken
Step 1
Add all ingredients for the chicken except the spice mixture into a pressure cooker and cook on high for 10 minutes with a 5 minute natural release.
Step 2
Shred chicken and add the spice mixture to taste.
Step 3
Keep warm until time to serve.
For the Toppings
Step 4
Thinly slice the Serrano pepper.
Step 5
Peel and slice the purple onion in half along its axis and thinly slice. (a mandolin would be useful here)
Step 6
Get pre-prepared toppings ready for usage.
For the Guacamole
Step 7
Slice the avocados in half removing the pit.
Step 8
Mash avocados with a fork or mortar and pestle.
Step 9
Dice the sweet onion.
Step 10
Finely chop the garlic.
Step 11
Juice the lime.
Step 12
Dice the tomato.
Step 13
Combine all prepped ingredients and salt and pepper to taste.
Step 14
Optionally add a couple pinches of the taco seasoning.
For the Tortilla Chips
Step 15
Slice the tortillas in half, and then slice each half into thirds.
Step 16
Fry the tortillas in batches until they puff up, get just a bit of color, and the oil stops bubbling.
Step 17
Salt the chips while they are hot.
For the Cheese Sauce
Step 18
Add the butter to a pot and melt.
Step 19
Add the flour to the pot and vigorously mix with the butter until the flour is toasted (30-45 seconds)

Add the milk and mix until a roux is formed.
Step 21
Add the cheeses and mix until smooth.

(Optionally, but Suggested) Add the cheese spice mixture.
Assembly

Add a layer of chips.
Step 24
Add a layer of chicken.
Step 25
Add a layer of cheese.
Step 26
Add a layer of toppings, saving salsa, crema, and guacamole for the the last layer.
Step 27
Repeat at least once more.
Step 28
Top with salsa, crema, and guacamole.
