Ingredients
4 servings

1 cupred lentils

2 cupswater

1 tablespoonolive oil

1onion
medium, chopped

3garlic cloves
minced

1 tablespoongrated ginger

1 teaspoonground cumin

1 teaspoonground coriander

½ teaspoonturmeric powder

½ teaspoonpaprika

¼ teaspooncayenne pepper
optional, for added spice

2fresh tomatoes
medium, diced

1juice of lemon

salt
to taste

1 cupswater

fresh cilantro
chopped, for garnish
Instructions
Step 1
In a medium saucepan, combine the rinsed lentils and vegetable broth (or water). Bring to a boil over high heat, then reduce the heat to low and simmer for about 15-20 minutes, or until the lentils are soft and cooked through. Remove from heat and set aside.



Step 2
In a separate large saucepan or skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.




Step 3
Add the minced garlic and grated ginger to the pan and cook for an additional 1-2 minutes, stirring frequently.


Step 4
Add the ground cumin, ground coriander, turmeric powder, paprika, and cayenne pepper (if using) to the pan. Stir well to coat the onion mixture with the spices and cook for about 1 minute until fragrant.






Step 5
Add the diced tomatoes (with their juices) to the pan and cook for 2-3 minutes, allowing the flavors to meld together.

Step 6
Pour in a glass of water and stir to combine. Bring the mixture to a simmer.

Step 7
Add the cooked red lentils to the pan and stir well to incorporate them into the curry sauce. Simmer for an additional 5 minutes to allow the flavors to meld together.
Step 8
Stir in the lemon juice and season with salt to taste.


Step 9
Remove from heat and garnish with fresh cilantro
