Instructions
Step 1
Gather your ingredients and chop your vegetables
Step 2
Sauté the onion and celery in a little oil on a low heat. I use coconut oil. Cook until soft.
Step 3
Add the garlic, ginger and curry powder. Cook for a minute or two.
Step 4
Add the chopped peppers and cauliflower. Stir to coat with the curry powder.
Step 5
Add the carrots stir well and cook for a minute or two.
Step 6
Add 2 tins of tomatoes, stir it all up and season to taste. Add a touch of water here if your tomatoes aren’t juicy enough.
Step 7
Let your chakalaka bubble gently for about half an hour until your veg is soft.
Step 8
Add the baked beans, stir through, cook for another 5 minutes.
Step 9
Serve or divide for freezing.
