The sweet acid and fruit flavours found in raspberries works absolute wonders with this rich chocolate cake. It's a marriage of flavours that I have used on numerous occasions and is an absolute must with this cake.

Ingredients
12 servings
18 ozchocolate
2 tspvanilla
3 tblespresso
3 tblbrandy
18 tblbutter
1 ½ cupsugar
1 ½ cupground almonds
1 ½ cupHeavy whipping cream
9egg yolks
9egg whites
For the raspberry coulis:
Instructions
Step 1
Whip the cream until its firm.
Step 2
Beat the egg whites until they form stiff peaks.
Step 3
Melt the chocolate with the coffee, brandy, vanilla and butter. **(Do not mix while melting)**
Step 4
whisk the yolks with the sugar until pale and ribboned
Step 5
and add the almonds.
Step 6
Fold the two mixes together.
Step 7
Fold in the cream whisked firm
Step 8
followed by the whites at stiff peaks.
Step 9
Using a 9" springform pan bake in a 300 F oven for 40 min or until beginning to set.
Tip: (use a little water in the bottom of the baking sheet the spring pans sit on to even the cooking temp) or cook in a baine marie for 1 1/2 hours.
Step 10
Chill the Cake, and then warm the pan slightly when ready to remove the cake.
Step 11
Serve at room temperature with whipped cream and a Grand Marnier raspberry coulis.
Make the sauce:
Step 12
Puree the raspberries and pass through a fine sieve into a jug.
Step 13
Put the sugar, water and the shredded zest into a pan.
Step 14
Bring it to simmer and reduce for 2 minutes,
Step 15
then add the Grand Marnier and bring it back to the boil.
Step 16
Simmer for a further minute.
Step 17
Strain, cool and serve.
