Step 1

Step 2
Cut cauliflower into florets. You can slice the stalk and use here or use it in other recipes (e.g onion bhajis). Rub the harissa into the cauliflower. You can let this marinate for 1+ hour for better results.
Step 3
Place the cauliflower on a baking tray and cook at 200 degrees for 15 minutes or until the florets begin to char.

In the meantime, grate the carrots, thinly slice the cabbage and onion, and add the sweetcorn. You know what a slaw is…
Step 5
Add the lime juice, olive oil, and vinegar to the slaw and mix well. You could add chunks of the avocado to the slaw to make it creamier if you want - you do you - you’re the boss here.
Step 6
Prepare the avocado. I like mine in chunks and swirled around a little. Don’t forget plenty of avocado’s BFF: salt! If the avocado isn’t quite ripe, feel free to mush it up a little bit more. But please don’t make it into those sloppy store-bought fake Doritos ‘guac’
Step 7
Build your tacos. Do the tacos how you like them: soft or hard shell. You could even make these into fajitas. There are no rules here. Feel free to use my home made flat bread/wrap recipe. Or just buy from the store if you cba.
