Ingredients
2 servings
6 ozsmoked sausage
sliced in rounds or chunks
0.5 Tbspoil
omit if using fatty sausage
1celery stalk
diced
2bell pepper
diced
1onion
diced
2 tspCajun seasoning
add 1/2 tsp more if you like more Heat
1 ½ cupchicken broth
or water
8 ozdiced tomatoes Rotel
or reg
1 cupsinstantly rice
reg
0.5 TbspTomato Paste
if thickening is required
8 ozchicken breast
cubed and cooked
Instructions
Step 1
Add ingredients to pan over med.-hot while cutting in order above. (I like some of sausage & onions to brown.-JG)
Step 2
When garlic smells fragrant, add broth, tomatoes, & Cajun seasoning; stir & bringing to boil. Turn stove to med. low, add rice, stir, & cover pan. Make sure there is enough liquid to cover rice & simmer (instant rice= 5 min., reg. rice= 20 min.).
Step 3
Stir & cook on low 5 min. longer. (Add a little more broth to thin out or tomato paste to thicken, if necessary,). Taste and adjust seasoning as needed)
Step 4
Step 4: season and cook chicken then add desired amount on top
