Step 1
Mix yeast with 1/2 cup water. Toast saffron in dry pan and then grind up.
Step 2
Melt butter and mix in kitchen aid with ricotta. Add saffron, yeast mixture, salt and pepper. Add soda water, milk and flour. Knead. Allow to rise for 1 1/2 hours.
Step 3
Once risen, form into shapes. Bake at 180°C until lightly browned.
Step 4
After a few days, bake again at a low temp until dried and crispy. They will then store well in an airtight container for months.
