Step 1
To toast bread preheat the oven to 200C (fan). Place 4 slices of bread on the baking tray, lined with parchment. Drizzle with olive oil and sprinkle with the Mediterranean mix and bake for 10minutes or until golden.
Step 2
Halve the cherry tomatoes and slice the olives.
Step 3
Halve the avocado, remove the seed, scoop it with a spoon and thinly slice.
Step 4
Top toasted bread with sliced avocado, rockets, tomatoes, olives and crumbled feta. Add salt, pepper and chilli flakes if needed. Drizzle with balsamic glaze and enjoy!
