Instructions

Step 1
Place mashed potatoes and egg in a medium-size bowl and mix with a fork until well blended. Add the flour and onion, and mix well.
Step 2
Press the mixture out on a floured counter. Make sure there is enough flour on the counter and the top of the potato mixture so it doesn't stick. Cut out rounds.
Step 3
Fry the potato cakes until they are lightly browned on the bottom. Flip them and brown them. Remove the potato cakes to a plate or parchment lined pan. Keep them warm while you continue frying the remaining potato mixture. Serve warm.
