2cans chickpeas
drained and rinsed
5roma tomatoes
diced
0.5 bunchparsley
chopped
1red onion
small, finely diced
⅓ cupblack olives sliced
Vinaigrette
Instructions
Step 1
Place first 5 ingredients in a large bowl.
Step 2
In a small bowl vigorously combine all vinaigrette ingredients.
Step 3
Add vinaigrette the large bowl and combine well.
Step 4
Serve immediately or else, better yet, refrigerate in sealed container overnight and serve once flavors have intensified.
