Instructions
Preparing mutton
Step 1
Thaw mutton and soak in vinegar water
Step 2
Remove from vinglegar water and rinse
Step 3
Cut and remove all fat (white parts of meat)
Step 4
Season with season all, chief Green seasoning, and Goya green seasoning
Step 5
Allow to marinate overnight
Cooking Mutton
Step 6
Fill large stock pot with water
Step 7
Bring water to boil and add mutton
Step 8
Boil mutton for 1 hour (or until tender), skimming and removing the froth and fat from the top of the boiling water
Step 9
Dice tomato, green pepper, and onions and add to mutton
Step 10
Add bay leaves, thyme, salt, black pepper, ketchup, barbecue sauce, curry powder, sugar, sazon, and soy sauce to the water and mix well
Step 11
Add gravy browning to your desired darkness
Step 12
Boil for 15 more minutes
